Need a crowd pleasing appetizer?  How about some Spinach Artichoke Dip?  Simple enough for a Super Bowl party but fancy enough for Christmas Eve (we munched on this as we were lounging around) – serve with a fresh baguette, pita chips or tortilla chips.

Ingredients:

  • 8 oz. cream cheese (softened)
  • 1/4 c. mayonnaise
  • 1/2 c. grated Parmesan Romano cheese
  • 1 tbsp. chopped garlic
  • 1/4 tsp. salt
  • 1/4 tsp. fresh pepper
  • 1 can (14 oz.) artichoke hearts
  • 1/2 c. frozen chopped spinach (thawed)
  • 1/4 c. shredded mozzarella cheese

Directions:

  1. Preheat oven to 350 degrees
  2. Lightly grease a small oven-safe casserole dish
  3. In a medium bowl, mix together cream cheese, mayonnaise, Parmesan Romano cheese, garlic, salt and pepper
  4. Drain and chop artichoke hearts
  5. Gently stir spinach and artichokes into mixture
  6. Transfer to casserole dish and top with mozzarella cheese
  7. Bake for 25 minutes until bubbly, golden brown and delicious
  8. Try and wait a few minutes before diving in to reduce risk of molten Spinach Artichoke Dip mouth burns
